วัตถุประสงค์ของงานวิจัยในครั้งนี้ เพื่อพัฒนาและสร้างชุดอุปกรณ์ลำเลียงแผ่นกล้วยทอด เพื่อทดสอบสมรรถนะและประเมินประสิทธิภาพของชุดอุปกรณ์ลำเลียงแผ่นกล้วยทอด ในกระบวนการผลิตกล้วยอบไส้มะขาม ประชากรและกลุ่มตัวอย่างในงานวิจัยนี้ เป็นการสุ่มแบบเจาะจง ประกอบด้วยแผ่นกล้วยทอดก่อนการใส่ไส้มะขาม สมาชิกกลุ่มวิสาหกิจไส้เมี่ยงกรอบสมุนไพร ผลการพัฒนาและสร้างชุดอุปกรณ์ลำเลียงแผ่นกล้วยทอด ได้ชุดอุปกรณ์ลำเลียงในกระบวกการผลิตกล้วยอบไส้มะขาม ขนาด 800 × 1200 × 750 มิลลิเมตร โดยผู้เชี่ยวชาญที่มีส่วนเกี่ยวข้องมีความพึงพอใจในภาพรวมเฉลี่ย 4.83 ค่าส่วนเบี่ยงเบนมาตรฐาน 0.25 มีความพึงพอใจอยู่ในระดับมาก จากการทดสอบสมรรถนะและประเมินประสิทธิภาพของชุดอุปกรณ์ลำเลียงแผ่นกล้วยทอดพบว่าความเร็วในการสั่นสะเทือนที่เหมาะสมอยู่ที่ ความเร็วเบอร์ 1 (ความแรงในการสั่น55.4mm/s) และมุมเอียงของรางลำเลียงอยู่ที่ 6 องศา จะสลัดน้ำมันออกมากสุด 4.20 กรัมต่อน้ำหนักกล้วย 1 กิโลกรัม มี เศษแตกหักน้อยที่สุด 1.77 กรัม เวลาที่ใช้ 66.40 วินาที การเปรียบเทียบการทำงานใน 1 ชั่วโมงระหว่างการลำเลียงแผ่นกล้วยทอดแบบเดิมกับวิธีลำเลียงด้วยชุดอุปกรร์ลำเลียงแผ่นกล้วย พบว่า วิธีปรับปรุงที่ใช้ชุดอุปกรร์ลำเลียงจะสลัดน้ำมันได้ 23.04 กรัม วิธีเดิมสลัดน้ำมันได้ 12.12 กรัม และอัตราการผลิตแผ่นกล้วยทอดต่อ 1 ชั่วโมง วิธีใช้ชุดอุปกรร์ลำเลียงจะผลิตแผ่นกล้วยทอด ได้ 3,683 กรัม มากกว่าวิธีเดิมถึง 1,306 กรัม
The purpose of this research is to develop and build a series of fried banana conveyor kits. To test the performance and evaluate the effectiveness of the banana chips conveyor kit. In the production process of baked bananas stuffed with tamarind. The population and samples in this research are randomly selected that is consisting of fried banana chips before the filling of tamarind and member of Herbal Coconut Wrapped Stuffed Crispy Enterprises (Saimiang Samunprai Enterprises). Development and creation of a fried banana chips conveyor kits that size is 800 × 1200 × 750 mm by the experts involved had an average overall satisfaction of 4.83 the standard deviation of 0.25 is very satisfied. Performance tested results and performance evaluation of the banana chips conveyor kit showed that the optimum vibration speed was no.1 speed (vibration strength of 55.4mm/s) and the inclined angle of the conveyor rail was 6 degrees that can be eliminating the oil up to 4.20g per 1kg. banana weight before fried and contains minimal fracture 1.77 g. with time spent 66.40 sec. Comparing the work in 1 hour between the old method to fried banana chips conveyor and the improved with used the conveyor kit. It was found that the improved method by using the conveyor kit can be eliminated oil was 23.04 g. The old method can be eliminate oil was 12.12 g. The production rate of fried bananas chips per hour shown that 3,683 g that was 1,306 g more than the old method.
