งานวิจัยชิ้นนี้เป็นศึกษาการแปรรูปผลิตภัณฑ์สัตว์น้ำของวิสาหกิจชุมชนผู้เลี้ยงสัตว์น้ำในจังหวัดเพชรบูรณ์ วัตถุประสงค์เพื่อเพิ่มประสิทธิภาพในการสร้างผลิตภัณฑ์แปรรูปจากผลผลิต โดยมุ่งเน้นการพัฒนาเทคโนโลยีด้านนวัตกรรมเพื่อนำไปใช้ในการพัฒนากระบวนการผลิต คณะผู้วิจัยได้มีแนวคิดที่จะสร้างเครื่องแล่ปลาสำหรับธุรกิจแปรรูปขนาดเล็กของชุมชนในจังหวัดเพชรบูรณ์ การทดสอบแบ่งออกเป็น 3 ระยะ ระยะแรกเป็นใช้เครื่องแล่ปลาในการทดลองเบื้องต้นร่วมกับกลุ่มวิสาหกิจชุมชนผู้แปรรูปปลาน้ำจืด ระยะที่ 3 เป็นการออกแบบการทดลองหลังจากการปรับปรุงข้อบกพร่องที่ได้รับมาจากข้อเสนอแนะและคำแนะนำจากระยะแรก เพื่อให้เครื่องจักรสามารถทำงานได้อย่างเต็มประสิทธิภาพ และในระยะที่ 3 คือการทดสอบเครื่องแล่ปลากับปลาที่มีลักษณะเป็นลำตัวกลมและยาว ผลลัพธ์จากการทดลองพบว่า ในระยะแรก ใช้การพิจารณาจากผลลัพธ์การประเมินตัวแทนผู้ประกอบอาชีพเกี่ยวกับการแปรรูปลาน้ำจืดและผู้เลี้ยงปลาน้ำจืด พบว่าด้านที่ผู้ประเมินพึงพอใจมากที่สุดคือ ใบมีดที่สร้างจากสเตน และในด้านความปลอดภัย ส่วนในระยะที่ 2 ได้ออกแบบการทดลองเพื่อนำไปสู่การปรับตั้งเครื่องจักรให้สามารถทำงานได้อย่างเต็มประสิทธิภาพกับปลาที่มีลักษณะลำตัวแบน โดยแบ่งการทดลองออกเป็น 4 ครั้ง ซึ่งทำให้เสียเวลาในการปรับตั้ง แต่ผลที่ได้ทำให้เครื่องสามารถแล่ปลาออกมาได้ พบว่ามีประสิทธิภาพกว่าร้อยละ 90 ในระยะที่ 3 เป็นการนำเครื่องที่ถูกปรับตั้งให้ทำงานให้สามารถทำงานได้อย่างมีประสิทธิภาพ กับปลาที่มีลักษณะลำตัวกลมและยาว ซึ่งผลจากการทดลองพบว่า เครื่องยังไม่เหมาะสมกับปลาที่มีลักษณะลำตัวกลมและยาว ซึ่งในอนาคตผู้วิจัยต้องพัฒนาเครื่องมือในการประคองปลาที่มีลักษณะกลมยาวเพื่อสามารถทำให้เครื่องสามารถทำงานได้อย่างมีประสิทธิภาพเพิ่มขึ้น

This research is to study the processing of aquatic products of Aquaculture Community Enterprises in Phetchabun province. Objective to increase productivity in productive production. It focuses on developing innovative technologies for use in the development of production processes. The researcher had the idea to create a fishing machine for the small scale processing business of the community in Phetchabun province. The experiment was divided into 3 phases. First, the fish was used in the preliminary experiment with the group of freshwater fish processing community. Phase 3 was designed experiment after improvement of the defects derived from suggestions and words. Introduced from the early stages. The third stage is to test the fish and fish with a round and long body. The results of the experiments show that, in the first stage, the results of the assessment of the representative of the farmer in fresh water fish and freshwater fish farmers were considered. The most satisfactory aspect was that the evaluators were satisfied. The blade is made of stainless steel. And in security. Phase 2 has been designed to optimize the machine's ability to function fully with flat-body fish. The experiment was divided into 4 times, which wasted time setting. But the result is that the machine can fish out. It was found that 90% efficiency in the third phase was the implementation of the machine was adjusted to work effectively. The fish is round and long. The results of the experiment. The machine is not suitable for fish with round and long body. In the future, the researcher must develop tools to support the fish with a long round to make the machine can work more effectively.
