| บทคัดย่อ |
This research studied, antioxidant activity and phenolic content from Hang Phrayaleamkeng Rice had 3 stage. (milk stage, dough stage and mature stage). This study was determine the processing method with the variation of germination conditions by soaked rice with water at 12, 24, 36 and 48 h. and incubation at 12, 24, 36 and 48 h. The obtained were determined for their levels of antioxidant activity by scavenged radical 2,2-diphenyl-1-picrylhydrazyl (DPPH) and ability antioxidants ABTS+ and total phenolic content by Folin-Ciocalteau method. The results showed that mature rice stage soaked with water at 24 h and incubation at 12 h of total phenolic content DPPH free radical and ABTS+ had the highest. The antioxidant activity was correlated significantly with and total phenolic content of rice.
