งานวิจัยนี้มีวัตถุประสงค์ในการออกแบบและสร้างเครื่องกรอกข้าวหลามแบบพกพาสำหรับกระบวนการผลิตข้าวหลาม เพื่อทดสอบสมรรถนะ ประสิทธิภาพ และประเมินความพึงพอใจ รวมไปถึงการถ่ายทอดเทคโนโลยีและองค์ความรู้ให้กับกลุ่มข้าวหลามน้ำหนาวแม่เสลี่ยง ตำบลน้ำหนาว อำเภอน้ำหนาว จังหวัดเพชรบูรณ์ ซึ่งจากการวิจัย พบว่า ผลการประเมินความพึงพอใจในการออกแบบเครื่องกรอกข้าวหลามแบบพกพา มีระดับความพึงพอใจของผู้เชี่ยวชาญในภาพรวมมีค่าเฉลี่ย 4.13 ค่าส่วนเบี่ยงเบนมาตรฐานเท่ากับ 0.63 และมีผลการประเมินความพึงพอใจในการสร้างเครื่องกรอกข้าวหลามแบบพกพา พบว่า ระดับความพึงพอใจของผู้เชี่ยวชาญในภาพรวมมีค่าเฉลี่ย 4.21 ค่าส่วนเบี่ยงเบนมาตรฐานเท่ากับ 0.61 มีค่าคะแนนความคิดเห็นอยู่ในระดับมาก อย่างไรก็ตามจากการวิเคราะห์ผลจากการทดลองกรอกข้าวหลามโดยการใช้เครื่องกรอกข้าวหลามแบบพกพา ที่ความเร็ว 10, 20, 30, 40 และ 50 รอบ/นาที พบว่า การทดลองที่เหมาะสมที่สุดอยู่ที่ 30 รอบ/นาที ซึ่งมีกำลังการผลิตในการกรอกที่ทำให้เม็ดข้าวแตกในปริมาณที่ยอมรับได้
